History of Maple: The production of maple syrup is one of only a few agricultural processes in North America that is not a European colonial import. In the early 1800s, maple sugar became a staple in New England, due to its low cost in comparison to imported cane sugar. Many dairy farmers would produce maple sugar and syrup in their farm's off season as a secondary from of income. Maples are usually tapped beginning between 30 and 40 years of age, but can continue to be tapped for sap until they are more than 100 years old.
